I want to show a client a rough edit privately. With music on it that I did not get copyright for. what video hosting site could I use?

You could throw up your own site in something like Wordpress using cheap shared hosting package.

Or, if it's just for one person, send them a disk / thumb drive in the post?

Vimeo. Set the video to password protected on upload. Send client the link & password.

I had read that vimeo have now started a trawl on even private videos for copyright infringement. hope this isn't true : )

Vimeo seems OK for copyright music in private vids if you are a Paying member
