Hello shooters!
I'm going to be doing some filming in Ireland for short online videos in a couple of weeks and while releases will be fairly straight forward on some pieces with specific people, we'll also be shooting some ambient shots in a couple of pubs. If I put a filming notice outside the door of the pub a few hours before we start will that cover me for releases? Is there any specific wording I have to use or take a photo of it posted in case anybody tries to claim their likeness when the video goes live online?

The simple answer is there's no simple answer. A unilateral release is legally a grey area, and signs on doors and gates even moreso. But then it also depends on the project - documentary shooting in public streets is altogether different than drama in a location.
Pubs and hotels aren't always keen to have their clientele filmed - and it may put off some custom. Better to do a deal along the lines of "Hi everyone, I just want get a few moments of background shots, I'll buy everyone who's ok for that a round right now" and get it all on camera - including everyone accepting your offer, and use that as a rolling release!

It's not perfect, but it's a balancing act. It has the core elements of a release (including exchange, description of what's being done and how the footage will be used, and the acceptance) whilst facing facts that almost nobody in the pub will ever see the film online or chase you for money you clearly don't have!
