Heya, I'm a social anthropology student and a screenwriter/editor, and I'll be doing my research project next academic year on editing and structuring techniques in ethnographic / documentary films in relation to the intention of the film maker to evoke specific emotional reactions in the audience. Please let me know about any suggestions you might have on reading materials, or if you would be open to meeting up and discussing it with me, or if you know anyone who might know more about this.
I'll be working with an established documentary film maker who is about to start editing their film in September, and I'll be doing participant observation for few months.

Not quite all, but a huge percentage of the emotional pull and direction of a scene is in the music selected. Turn off the sound on a random bit of footage, and play some music to accompany it. Then rewind and swap the track for something different. Repeat. Each choice of track will give the clip a very different mood. Try some 'jokey' tuba music, some string-heavy classical, some throbbing techno.
I'm sure if you ask a composer they'll be able to give you more tips than I can ;-)
